Overnight Oat Pancakes

Ingredients

    • 1 cup Banana Flax Overnight Oats, dry mix

    • 1 egg

    • ½ cup water

    • 2 tbsp plain unsweetened Greek yogurt, to finish

    • 6 fresh blueberries

    Directions

    1. Blend the dry mix for about 20 seconds, until it resembles flour.

    2. Whisk the flour with the egg and water into a thick pancake batter. It should mound off the spoon rather than run. Let rest for 5 minutes.

    3. Heat a dry nonstick pan over medium-low. Spoon in silver-dollar rounds and cook for about 2 minutes per side, until they lift cleanly.

    4. Cool completely. Stack, spoon the yogurt on top, and finish with blueberries.

    5. Refrigerate plain pancakes up to 4 days or freeze between sheets of parchment. Add yogurt and blueberries just before serving.
